Tortellini in a Meat Sauce


Here is one of my recipes from my Pasta Cookbook due out Fall of 2022



Ingredients


1 lb of beef filled Tortellini

¼ lb ground pork

¼ lb ground beef

¼ lb prosciutto ripped into strips

¼ lb mortadella, diced

½ cup sweet vermouth

¼ cup unsalted butter

1 onion, minced

1 carrot, minced

1 celery stalk, minced

1 tablespoon tomato paste

Salt and pepper

Olive oil


Directions


Place a large deep skillet over medium-high heat, place half the butter and a nice drizzle of Olive oil in the skillet, stir to combine. Add veggies and saute until soft, add pork and beef and saute until brown. Season, add vermouth, reduce heat to medium, and simmer until vermouth is about gone. Next, add tomato paste, a few tablespoons of water, stir, reduce heat to low, cover and simmer for 30 minutes. Remove from heat, add prosciutto and mortadella, stir, cover, and set aside.


Cook tortellini as directed on the package, reserve 1 cup of the pasta water.


Transfer cook tortellini to a serving dish, top with the remaining butter, toss to coat. Next, add the meat sauce, toss, and add some of the pasta water if a bit too thick.
