Olive Bread, quick

3 cups unbleached flour

2 cups of pitted, chopped Olives

3 eggs

3/4 cup sour cream

3 tablespoons olive oil

2 tablespoons raw sugar

1 tablespoon baking powder

1 teaspoon salt


Preheat Oven to 350 degrees

In a stand mixer beat eggs, sugar, salt, and oil. Remove from the stand mixer.

Stir in Olives

In another bowl sift together flour and baking powder.

By hand, alternating, 3 to 2 parts, the flour mixture with the sour cream, starting with the flour. Blend well but do not over mix.

Pour into a prepared loaf pan.

Bake for about an hour plus, until a toothpick comes out clean.

Let stand for at least an hour before serving
