"Peanutty" Cookies

Here is a new cookie that will be in next years Holiday Dessert Cookbook - It is one of the special cookies I have not shared before - Enjoy


Ingredients


1 cup of peanut butter

1 cup salted peanuts, chopped

1/2 cup of peanut butter chips, crushed

1/2 cup of peanut flour

1/2 cup of unsalted butter, room temp

1/2 cup of raw sugar

1/2 cup of brown sugar

1 egg

1 teaspoon of Vanilla extract

1 teaspoon of Almond extract

1/2 teaspoon baking powder

1/2 teaspoon of salt


Directions


Preheat to oven to 350 degrees


Line baking sheets with parchment paper


Whisk dry ingredients in a large bowl and set aside.


Cream the butter, peanut butter, extracts, and sugars in a stand mixer until creamy. Add dry ingredients, blend until smooth. Remove bowl from mixer and fold in peanuts and chips.


Using a tablespoon scoop, place on prepared baking sheet about 2 to 2 and a half inches apart and bake for 10 minutes or until tops are dry and edges have set.


Remove and cool on rack unit set.
