It is surprising how many carbs are in everyday items, like coleslaw, traditional Deli Style coleslaw has 6 to 8 carbs for a half a cup, it's mostly due to the sugar and the carrots. So I set out to make a Keto-friendly slaw - Michael loved it and he loves cole slaw - Enjoy
3 cups of shredded red cabbage
3 cups of shredded green cabbage
1 Red bell pepper, cut into match sticks
3 stalks of celery thinly sliced
1 cup avocado mayonnaise
3 tablespoons "Purecane" sugar†
3 tablespoons apple cider vinegar
1/2 teaspoon celery seeds
Salt and Pepper to taste
† "Purecane is a new sugar substitute
Place the cabbages in a colander and sprinkle with salt, tossing as you add the salt. set aside for about an hour, toss every so often.
Rinse cabbage with water and place in a salad spinner to dry off, then add to a large bowl. Also add to the same bowl the pepper and celery, toss.
In a small bowl add the vinegar and the sugar substitute and whisk to dissolve the "sugar". Next, add the celery seeds and may and whisk to combine. Taste and season accordingly. Pour over cabbage mixture and toss to combine.
Cover and place in the fridge for about 2 hours.
