Ischler Torteletten, Almond Butter Cookies

2 cups unbleached flours
2 sticks on unsalted butter, cut into cubes
1 cup on almond flour
3/4 cup raw sugar
1/3 cup of minced almonds
1 tablespoon of lemon zest
1/2 teaspoon of baking powder
1/4 teaspoon of salt
Place all dry ingredients into the Cuisinart and pulse to combine
Next add lemon zest, minced almonds, and butter, pulse to combine, it should look like little pebbles
Place onto a piece of plastic wrap and combine into a log, wrap and chill for at least 2 hours.
Preheat oven to 350 degrees
On a mandolin or with a knife, cut into 1/4 inch thick slices.
Place on a parchment-lined cookie sheet and bake for about 10 minutes once golden.
