I have not made this dish in years, I came across it in a pile of recipes from several years ago and it is actually Keto friendly too.
Ingredients
12 fresh sardines, cleaned and heads removed
1 lb of medium shrimp, cleaned, peeled and butterflied
1 lb of squid, cleaned and sliced into rings
1 lb of oysters, shucked
4 poblano pepper, seeded and cut into strips
2 cups of coconut flour
Salt and pepper to taste
Canola or avocado oil
Lemons, cut into wedges
Directions
Line a baking sheet with parchment paper and place a rack on top.
Place a large deep skillet over high heat and add enough oil to be about 3 inches in the skillet, heat oil to 350 degrees.
Place flour in a deep baking dish and season well. Working in batches, dredge seafood in flour, shake off excess and fry fish until golden anywhere from 15 to 30 seconds depending on fish. I do one type of fish at a time, transfer to the prepared baking sheet, and repeat with the balance of the fish until done. The pepper will take about a minute to fry.
Once fish as drained of the oil, place in a large severing bowl and garnish with lemons. I usually serve this with a nice salsa.
