Paprikahuhner

Here is another of Ina's signature dishes.

ingredients

2 whole chickens, about 3 to 4 pounds, cut up

1 stick unsalted butter

3 medium onions, diced

3 large red peppers, cut into ribbons

1 cup chicken stock

2 cups of sour cream

1/4 cup of flour

2 to 4 teaspoons of smoked paprika

Salt and Pepper to taste

Directions

In a large Dutch Oven over medium/high heat, melt butter.

Now add the onions and saute until tender

Place chicken and peppers over onions in Dutch Oven, salt, and pepper to taste, cover and reduce heat to low and simmer for about 45 minutes.

Once the chicken is done, remove from Dutch Oven, and whisk in flour, keep whisk until the sauce in Dutch Oven starts to thicken, slowly pour in chicken stock, keep whisking, now add paprika, and whisk until sauce is to desired thickness.

Next whisk in sour cream, once combined, add the chicken back to Dutch Oven, Spoon sauce over chicken, cover and warm chicken on very low heat, do not boil. After 10 to 15 minutes it should be ready to serve.
