Quad of Roasted Root Veggies

Ingredients Note: dices should be about 1/2 inch or so 3 cups diced sunchokes 3 cups diced red potatoes 6 beets, pealed and diced 2 celery roots, peeled and diced 8 cloves of garlic, minced 1/3 to 1/2 cup of olive oil Salt and pepper to taste Directions Preheat oven to 400 degrees In a large bowl place all the ingredients and toss to coat. Let stand in bowl for about an hour before baking, tossing about every 15 minutes. Pour into a deep baking dish and bake for about 45 minutes or until veggies are soft. Banana Nut Bread

This is actually my Grandmothers recipe; i have all her cook books and this recipe was stuck in one of her books on a piece of paper in her hand writing. I have made it too and its great. Ingredients 1 3/4 cup of unbleached flour 2 1/3 teaspoon of baking powder 1 cup of banana pulp 2/3 cup of raw sugar 2/3 cup of chopped pecans 1/3 cup of cubed butter - (5 1/3 table spoons) 2 eggs 3/4 teaspoon of lemon rind or orange rind 1/2 teaspoon of salt Directions In a large bowl mix together the flour, salt and the baking powder. Stuffed Cabbage

Also on that same legal pad was this recipe. I remember my Mom made a great stuffed cabbage and a few years ago i decide to create one of my own. I use pork instead of beef and i add a few other ingredients to give it a smooth flavor, i hope you all enjoy this. I was in my kitchen today working on my November News Letter recipes and I came across this recipes in one of my legal pads in the kitchen. A few years ago I received a request for a Baked Ziti recipe. I remember when i got this email, i though its a pretty simple recipe and what my spin would be on it. Soy Glazed Chicken

This a pretty easy recipe but packs great flavor. Ingredients 8 bone in, skin on, Chicken Thighs 2 cups homemade Chicken Stock 2/3 cup Raw Sugar 1/2 cup Rice Vinegar 1/2 cup reduced sodium Soy Sauce 1/4 Pickled Ginger 4 tablespoon diced Garlic 1 tablespoon dried Chives & Parsley Avocado Oil Salt and Pepper to taste In large skillet over medium high heat, Drizzle enough oil to coat bottom of pan. I received an email requesting this recipe. I served this once at a dinner party. I never really like split pea soup, do to the ham it was always too salty. This a light soup that is perfect for early fall. This does not freeze all that well so i reduced the recipe for four servings. More soups, it has been quite chilly here in the evenings which makes me want to make soups. This recipe is pretty simple, I had a version of this soup at a place in NYC and i went home and recreated it. Now you can do the long way, by buying the beans, soaking them, then simmering them to get them ready for the soup. This is a combination of a recipe i found for beef soup, that was a bit boring and a recipe we learned in China for beef stir fry: I just threw them together and added some other things as well for good measure. Cinnamon Raisin Apple Bread

I am still playing with breads, we had a version of this bread a few years ago and i have trying to recreate it ever since and I have finally got. The trick was using dried apples. Ingredients 3 cups of unbleached flour 1 cup chopped pecans 1 1/4 sticks of butter, diced 1 can of fresh pumpkin, 15oz can 2 eggs 1/3 cup half and half 3/4 cup raw sugar 3 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 1/2 teaspoon allspice 1/4 teaspoon baking soda Direction Preheat the oven 350 degrees Whisk together all the dry ingredients with the exception of the baking soda.
