Walnut Cookies

Here is one of my go to cookies for the holidays. Ingredients 2 1/2 cups of walnuts 1/2 cup powdered sugar 1/2 teaspoon salt 2 sticks of butter, diced 1 teaspoon real vanilla extract 1 cup unbleached flour Powder sugar Directions Place walnuts and powder sugar into food processor, pulse to break up the nuts, then turn on the processor until nuts are finely ground. Next slowly add the butter to the food processor, pulsing to incorporate, then full on until smooth. Pour in vanilla and salt while processors is going. Now add the flour, pulsing again until dough starts to form into a ball. Remove from processor and place dough on some plastic wrap, flatten dough into a disc, wrap and chill for a

Linzer Cookies

One more cookie recipe, then back to other dishes. I could never find a Linzer Cookie recipe that did not come out very dry, also it never tasted like the Linzer Tarts I use to get at this one bakery in Buffalo. So I set I myself to recreating that recipe to the flavor I remember. Ingredients 2 1/2 cups of Unbleached flour 1 cup of Hazel nuts 2/3 cups of raw sugar 1 teaspoon of cinnamon 1/4 teaspoon of cardamon 1/4 teaspoon of salt 2 sticks of unsalted butter, diced 1/4 teaspoon of almond extract 1 teaspoon of fresh grated lemon zest 1 cup of raspberry jam Powder Sugar Direction Place all the dry ingredients,plus the nuts into the food processor and pulse until nuts have been finely ground.

OLD FASHIONED BANANA CREAM PIE Ingredients 1 pie crust (9 inch), baked - store bought 3 tablespoons cornstarch 1 2/3 cups water 14 ounces sweetened condensed milk 3 egg yolks, beaten 2 tablespoons butter 1 teaspoon vanilla extract 3 medium bananas lemon juice whipped cream 1 pint heavy cream 1/3 cup powdered sugar 1 teaspoon vanilla Direction In heavy saucepan, dissolve cornstarch in water; stir in sweetened condensed milk and egg yolks. I have been working on this recipe for years and finally got it to a point that i wanted to share it. Asian food is one of my favorite food groups, done right. Now you can add more veggies to this recipe, but just wanted to taste the chicken: this is how i had this in Hong Kong, simple. Artichoke Soup

I have not made this in awhile, so i think it will make this weekend rotation. It is another very simple soup, with very few ingredients, again the star is the Artichokes. Ingredients 10 to 12 small Artichokes, remove the tough outer layers, rough chop 2 large white onions, chopped 4 1/2 cup veggie stock, unsalted 4 tablespoons olive oil, plus more for garnishing 1 tablespoon unsalted butter 1 clove or garlic, minced 1/4 cup fresh grated parmesan cheese Salt and Pepper to taste Italian Parsley for garnish Directions. Fennel Soup

There so few soup recipes that are very simple, with very few ingredients so that the star ingredient takes the main stage. ingredients 6 Fennel Heads, chopped 2 large white onions, diced 4 1/2 cups of veggie stock, low or no salt 1/4 cup fresh grated Parmesan Cheese 1 tablespoon of un salted butter Salt and Pepper to taste Directions Place a large sauce pan over medium heat, melt butter, now add onions and saute until soft. Ingredients 6 sticks of unsalted butter at room temp 7 cups of all purpose unbleached flour 2 cups of raw sugar 2 teaspoons of pure vanilla extract 1/2 teaspoons of salt 1/3 teaspoon of real orange extract Directions In large bowl whip the butter until creamy, next with the mixer on low, slowly add the sugar. Cream of Asparagus Soup

I was going through the freezer today, when i came across several bags of asparagus ends: during the year instead of throwing out the ends of the asparagus, I save them to make soup. Well actually I have entire freezer full of bones, veggie ends, apple cores, etc. This soup calls for homemade Chicken stock, which is really easy to make, and its all from things most people throw out. You will need a few chicken carcasses, celery ends, carrot ends, onions and parsley stalks. I will post a bit later my stock recipes, all from throw away ingredients; now back to the soup. If you like a garnish of asparagus tips for the soup you will need a few fresh spears. Right are some of the frozen asparagu
