Chicken Fricassee

Here is my take on Chicken Fricassee, a bit more earthy then ones i have had. Ingredients Group 1 1 3 to 4 lb chicken cut up 1 carrot rough chopped 3 stalks of celery rough chopped 1 large onion quartered 2 bay leaves 1 table spoon of pepper corns, about 12 1 table spoon yellow mustard seeds Olive Oil hand full of Italian parsley salt to taste Group 2 1/3 cup of chopped pancetta 1 stick unsalted butter 3 cloves garlic, minced 1 cup of Shiitake Mushrooms, sliced 1 cup of Chanterelle Mushrooms, sliced 2 shallots, sliced 3 cups of chicken stock 1/2 cup heavy cream 1/3 cup unbleached flour 1/3 cup vermouth 1/3 cup fresh Italian Parsley, chopped 1/4 to 1/2 teaspoon of red pepper flakes salt and p

Lentil & Chickpea Salad

Here is a great summer salad that you can make a head and it gets better as all the flavors marinates. Ingredients 1 can of lentils of choice, drained and rinsed. I use red lentils 1 can of Chickpeas, drained and rinsed, 1 1/2 cup of cherry tomatoes, halved 1 cup of diced cucumbers, seeds removed 1/2 cup calamata olives 1/2 cup of chopped red onions 1/2 cup of chopped yellow peppers 1/4 cup feta cheesed, crumbled 1/4 cup chopped Italian parsley 1/4 cup of olive oil 1/4 cup lemon juice - if using fresh all zest one lemon 1 table spoon of fresh oregano, chopped salt and pepper to taste Directions In a small bowl whisk together lemon juice, zest, olive oil, oregano, salt and pepper, set aside.

BBQ Chicken in Yogurt Sauce

Here is another of my staples for the BBQ. Bacon Chicken

Here is another of my recipes from my book that i created sometime ago. It is a really simple recipe and who does not like Bacon. BBQ Rack of Pork Chops.

Here is another favorite BBQ recipe of mine, the sauce has allot of ingredients but it is so worth it. Carnitas Empanadas

Pickled Catfish

We had this fish a few years back and i asked the chef for the recipe. He sort of gave it to me but i had to figure out the rest. The fish is sort of Ceviche but then it is also cooked too and served cold. it is great to make in advance and have as a light lunch. Ingredients 4 cat fish fillets, about 2 lbs 4 limes zest and juiced 1 1/4 cups olive oil i onion diced 1 cup of white wine vinegar 1/3 cup of pickled jalapenos, sliced 6 pink pepper corns 4 cloves of garlic minced 1 teaspoon cumin seeds 1 teaspoon of fresh oregano leaves 2 fresh bay leaves 1 1/2 cups fresh cilantro, chopped stems removed 1 cup of olives of choice or beans Directions In a large deep dish, ceramic, place fish and cove

Clam Chowder

This is my version on the classic dish, its a nod to New Orleans. Ingredients 32 oz of chicken stock, low salt 48 clams, steamed and removed from shells and diced 1 1/2 lb red potatoes, diced but skins left on 1 quart of milk 1 stick plus 2 table spoons of unsalted butter 4 andouille sausages, diced 1/4 lb of bacon, diced 6 stalks of celery, diced 6 tomatoes, diced and seeds removed 2 medium onions, diced 1 red pepper diced 6 table spoons of flour 3/4 teaspoon of thyme leaves salt and pepper to taste Directions In a large soup pot saute the onions, celery and peppers in the two table spoons of butter, do this on medium low heat so as not to brown the butter. A few years ago Michael asked me to make Rugelach for an event at work. There is a bakery in NYC that makes outstanding Rugelach, so i asked what the dough was made of and they told be it is like any dinner roll dough only that there is bread crumbs in the dough. Hmm bread crumbs. So with a few misstep i came up with a nice dough recipe, i do not know if its a traditional one but we like it, and i hope you all do too. Spicy Meatballs

Well I sort of came up with this as an alternative to my Swedish meat ball recipe: only this one is much easier to make and does not take as much time to prepare. I was thinking, I like the flavors in meat tacos but wouldn’t it be great in a meat ball sub sometimes too, or as an app at a dinner party without the mess of a taco. Here is a recipe i came up with a few weeks ago when i was faced with making chicken but did not want the same old thing. Very Berry Dessert

I created this back in 2007 for a dinner party due to many of the guests had chocolate allergies, needless to say it was a big hit. It is really simple and you can make it a head. If you are making it ahead, leave off the final layer of topping and dress it a few hours before serving. The reason is the berry mixture will bleed through the topping after a few hours. I know this is a bit heavy for a Summer dish, but i have been asked for more veggie dishes and i was going through my recipe files and came across this recipe from 2008. Ingredients 4 red snapper fillets, cut into cubes 3/4 cup lime juice 1 teaspoon fresh oregano, diced 1 teaspoon salt 1 mango diced 1/2 of fresh orange juice 2 table spoons of garlic vinegar 1 jalapeno diced 1/2 cup water 1/2 cup of diced jicama 1 red onion diced 1 red/orange Italian pepper, sliced into rings 1/4 cup cilantro diced stems removed 1/4 diced green onions 2 teaspoons of fresh mint diced 1 lime juiced Directions In a large glass bowl place the lime juice, salt and oregano and stir, next place the fish in the bowl and toss to coat.
