4 6 to 8 oz. catfish fillets
1 stick unsalted butter
4 tablespoons of freshly minced cilantro
1 clove of garlic minced
1 lime, zested and juiced
4 tablespoons sweet paprika
2 ½ tablespoons fresh ground pink salt
1 tablespoon onion powder
1 tablespoon Garlic powder
1 teaspoon cayenne pepper
2 teaspoons ground white pepper
2 teaspoons ground black pepper
2 teaspoons red pepper
2 teaspoons dried thyme
2 teaspoons dried oregano
1 teaspoon ground yellow mustard
1 teaspoon ground coriander
Place all ingredients into a mason jar, shake to combine
Place all ingredients into a food processor and pulse to combine. Place on plastic wrap, form into a roll, wrap and chill.
Place cast iron grill on a high heat. Brush grill with oil.
Pour seasoning mix on fish fillets, coating each side well – it’s about a 1 teaspoon of seasoning per fillet.
Grill each fillet about 5 minutes per side – the fish feels firm when done.
Transfer to serving plates, garnish with a wheel of the compound butter and a lime wedge.
