1 1/2 cups of fresh huckleberries
12 oz of cream cheese
3/4 cup of sour cream
2 tablespoon unbleached flour
3 egg yolks
2 egg whites
3 tablespoons of raw sugar
1/2 teaspoon salt
Pastry crust of choice - I use store-bought
Preheat oven to 350 degrees
Place cream cheese, egg yolks, 1 tablespoon of flour, 1 egg white, sour cream, sugar, and salt in the stand mixer and blend until smooth.
Line pie dish with pastry crush of choice and brush with the remain egg white.
Place huckleberries in a bowl along with the remaining flour and toss to coat, then line bottom of the pastry line pie pan. There will be enough berries to make a double layer.
Smooth the cream cheese mixture on top.
Bake until set, about 30 minutes.
