1 1/2 lbs raw shrimp, peeled and deveined
1 1/2 cups sour cream
1/2 lbs of sliced cremini mushrooms
2 shallots diced
1/4 cup sherry
1/4 cup of thinly sliced leeks
4 tablespoons unsalted butter
2 tablespoon flour
Pinch of red pepper flakes
Salt & Pepper to taste
Hand Full of sliced green onions
In a large saucepan, over medium heat melt butter.
Now add shallots and mushrooms and saute until soft, about 5 minutes.
Next add flour, red pepper flakes, salt and pepper, stir.
Now add sour cream, leeks, and sherry, stir to combine, simmer for about 10 minutes
Adjust seasoning, then add shrimp, cover, turn off the heat. Leave covered for 10 minutes.
Place in serving dish, sprinkle with green onions and serve with rice of choice.
