1 cup raw sugar plus 2 tablespoons
2/3 cup of unbleached flour
1 stick of unsalted butter
1 bar of Green and Blacks 70% chocolate (3.5 oz bar)
1/3 cup of Green & Blacks unsweetened cocoa powder
2 tablespoons grated orange rind
1/2 teaspoon real vanilla extract
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Preheat oven to 325 degrees
1. In a double boiler melt the butter and chocolate until smooth. Remove from heat and whisk in the remaining ingredients.
2. Next, pour batter into an 8-inch square pan: note - I prepare the pan with 2 parchment strips that cover the bottom of the pan and up to four sides, this makes it easier to remove the brownies from the pan.
3. Bake for about 30 minutes or until a toothpick comes out clean. Let cool in the pan for about 5 minutes then remove from pan and let cool an additional 15 minutes on a wire rack.
