Here is a fresh take on the traditional Cucumber and Onion salad.
6 to 8 cucumbers, thinly sliced
12 to 18 radishes, thinly sliced
1 red onion, thinly sliced
1/4 cup of apple cider vinegar
6 to 8 green onions, diced
a hand full of fresh dill
3 tablespoons of agave
1 tablespoon of sea salt
1 tablespoon olive oil
1 teaspoon of sea salt
1/2 teaspoon of black pepper, ground
In a medium bowl place cucumbers, radishes, 1 teaspoon of salt, and toss. Place bowl in the fridge for about an hour.
In another bowl whisk 1 cup of water with the vinegar, tablespoon of salt, agave, and a pinch of dill. Add onions, toss and place the bowl in the fridge for about an hour.
Drain cucumbers and radishes, transfer to a new bowl. Toss in olive oil and pepper
Using a slotted spoon, remove onions from marinade and add to bowl with cucumbers and radishes. Now add some of the marinades from the onions, along with the rest of the dill and the green onions, toss. Note: add the marinade a 1/4 cup at a time until the desired taste is achieved.
