Nusskipferln, Nut Crescent Cookies

2 1/2 cups of unbleached flour

1 cup of walnut or pecan flour

2 sticks unsalted butter, diced

3/4 cups of raw sugar

1 1/2 teaspoons Vanilla Extract

Vanilla Sugar

Place 3 Vanilla beans, cut and scrape seeds into a jar followed by 4 cups of powdered sugar. Shake and let stand for at least 4 days. Shake at least once each day.


Preheat oven to 350 degrees

Place all ingredients into the Cuisinart and pulse to combine. The dough should look like little peas, roll out onto a floured workspace, and kneed to combine. Then pull off small pieces about tablespoon size, roll into a log, roll in the vanilla sugar, then bend to form a crescent.

Place on a parchment-lined cookie sheet and bake for about 15 minutes or until golden.

While still warm, roll cookies in more vanilla sugar.
