Warm Potato and Mushroom Salad

Ingredients 1 1/2 pounds russet potatoes, peeled, cut into 1/8-inch-thick slices, patted dry. 2 tablespoons plus 2 teaspoons extra-virgin olive oil 4 large button mushrooms, sliced 1/4-pound fresh shiitake mushrooms, stemmed, quartered 1/4 cup minced fresh parsley 1 large garlic clove, minced 1 red bell pepper, seeded and thinly sliced 2 medium tomatoes, seeded and sliced 3 tablespoons Sherry wine vinegar or red wine vinegar 2 tablespoons chicken stock or canned low-salt broth 8 cups torn mixed greens 1 fresh chive bunch, minced 1 fresh Italian Parsley bunch, chopped and stems removed Directions Preheat oven to 425°F. So I have been playing with the recipe for some time now and I now like the flavor, it does not hit you over the head, spice wise, it slow builds as you enough the chicken. Tomato Watermelon Salad

This is a variation on a salad i had post awhile ago, I am using Feta and Avocado is this salad. I have made it with cucumber as well and its been a 50, 50 reading on who likes it with or without the cucumber - try for your self. Grilled fish skewers with Hawayej

Ingredients 2 ½ lbs Firm white fish – I use halibut – cut into 1-inch cubes 1 cup rough chopped parsley 4 cloves of garlic crushed 1 lemon juiced and zested Olive oil Chili flakes to taste – optional Salt to taste Hawayej spice mix – 1 tsp black peppercorns 1 tsp coriander seeds 1 ½ tsp cumin seeds 1 ½ tsp ground turmeric ½ tsp ground cardamom Pinch mace Directions Hawayej mix – grind seeds and peppercorns until fine, add the balance of spices, mix well transfer to large bowl. In the large bowl add with the haweyej mix, chili (if using) parsley, 1 tbsp of lemon juice, pinch of lemon zest, garlic and salt, mix well. Add fish to bowl, toss to coat well. I use my hands to rub the mixture into
