Chickpea Salad Sandwich

Ingredients 2 cans chickpeas drained, save the liquid 1 red bell pepper, minced 2 shallots minced 1 avocado, pitted and sliced 1 clove of garlic, minced Handful of Italian Parsley, chopped and stem removed 1/3 cup of Cashews, chopped 1/2 tsp turmeric black pepper to taste ½ cup vegan mayo (optional) Romaine Lettuce Tomato slices Sweet pea shoots Bread of choice Directions Place cashews, turmeric, avocado and garlic in a food processor and pulse until smooth. Next add the chickpeas, reserve 1/3 cup of whole chickpeas and set aside, and pulse, slowly add back the save liquid until chunky but not creamy. Zucchini Shrimp Scampi

INGREDIENTS: 4 medium Zucchinis, spiralized 1 lb. of medium shrimp, peeled and cleaned 1/4 cup homemade veggie stock ½ cup sheep Romano cheese – divided 1 lemon zested and juiced Handful of fresh Italian Parsley, chopped and stems removed 4 cloves of garlic, minced 2 tablespoons of earth balance Red pepper flakes, salt and pepper to taste DIRECTIONS: Melt earth balance in a large deep skillet over medium high heat. Add shrimp, garlic and red pepper flakes and sauté until shrimp or pink about 2 to 3 minutes. Now add veggie stock, lemon juice and zest and season and sauté for 30 second and add the zucchini, half the cheese and sauté for an additional 2 minutes. Remove from heat, serve and gar

Happy New Year, it been awhile since my last post, the holidays and entertaining sort-of got in the way. I do have a bunch of new recipes that I tried out over the holidays that I will be posting soon. A few of them I want to test once more before posting. We are still playing with the whole plant based diet and trying to strike a balance with the introduction of some seafood from time to time.
